When You Really Need A Salad

I always find it helpful to have a few salad recipes on hand during the holidays, allowing me to easily bring some raw veggies into the mix, adding bright, beautiful color and vibrancy to the menu. Even though Reese Witherspoon once said that "nobody wants a salad on Thanksgiving," I have to strongly disagree as I know that I certainly love that bite of something fresh and alive in between the richness of creamy mashed potatoes and warm flakey biscuits slathered in butter. So, for all you weirdos who, like me, also crave salad during your holiday feasts, here's one to add to the list. This salad has it all: some bitter notes from the radicchio, a little sweetness from the crispy apple and pear slices, nuttiness from toasted walnuts, crunchy texture from the thinly shaved fennel and carrots, and bright tanginess from the honey lemon vinaigrette. And, if you don't feel like eating salad on the day of the gluttonous holiday feast, make it the day after, and it will bring your body back to life again!
