The Recipe Index
One aspect of the Substack design that many of us have found frustrating is the search feature on both the app and the website, especially regarding recipes. Because so many recipes are embedded in longer articles with other information, accessing them again or remembering where they were can be very time-consuming and frustrating. I've been working on a solution for this issue and am excited to announce our new RECIPES section, which is now located in the navigation bar. While I'm still working on linking the entire recipe archive, hundreds of recipe links have already been categorized in this index into groupings such as Breakfast, Vegetables, Pasta, Vinaigrettes, Salads, etc. I will keep refining it over the coming weeks but at least this will start to make it much easier for you to find what you are looking for, so you can spend less time searching and more time cooking. x
An Easy Oven-Baked Cod
On Wednesdays, the market down the street from us receives a plentiful fresh fish delivery, so last night, Andre picked up 1 pound of cod fillets (called Merluzzo in Italy), cut into 4oz pieces for our dinner. Since the boys can be picky about fish, I prepared a dish for them while Andre focused on making us something satisfying. I seasoned their fillets with just a pinch of sea salt and some black pepper and pan-seared them until golden brown in olive oil. So easy, and they devoured it. For us, Andre improvised a quick baked cod dish with a few simple ingredients that came together in less than 20 minutes. The cod was light, flakey, and delicious - a perfect weeknight dinner that's a breeze to make.
