Serves 4
Makes enough for 1 full baking sheet or 4 round pizzas
1 C uncooked quinoa, soaked for a few hours and rinsed before cooking
4 eggs
2/3 C shredded mozzarella cheese
4 cloves garlic, minced
Sea salt
Black pepper
Pizza toppings of choice, like tomato sauce, fresh mozzarella, basil, parmigiano reggiano, pecorino, sausage, sauteed broccoli, chili flakes, pepperoni, etc.
Instructions
Preheat oven to 425°F. Cook the soaked and rinsed quinoa. Set aside and cool. In a large mixing bowl, combine the cooled quinoa, eggs, shredded mozzarella, and garlic. Season with sea salt and black pepper. Line a baking sheet with parchment paper. If you want a firmer crust, make smaller individual round pizzas, spreading the mixture out with your fingers. Or, you can spread the mixture out over the entire baking sheet into one large rectangular pizza, about 1/4 inch thick. Bake for 15-25 minutes or until golden and firm. Add desired toppings and bake for another 5-10 minutes until melty and yum! Enjoy!
