Spring Peas Two Ways
For me, one of the best parts of spring is fresh peas. We used to get them all the time from the Hollywood, Santa Monica, and Pasadena farmers markets when we lived in LA, and they are plentiful here in Turin now that spring has arrived. I love the quiet mediation of shelling them at the kitchen table, the sweetness of snacking on them raw, and how they can instantly brighten up any veggie-focused dish. This past week, we picked up a huge basket of peas from a local farm, and made two dishes, Spring Pea and Mint Risotto and Minty Pea Toast with Jammy Eggs, using a simple pea puree that tastes decadent and creamy but is entirely dairy-free. It's the food that satisfies and leaves you feeling great, which is always my favorite kind of food.
