Gluten Free Oatmeal Goji Berry Cookies
1/2 C goji berries
1/4 C water
1 1/2 C gluten free rolled oats
1/2 C gluten free flour
1/2 tsp sea salt
1/2 tsp ground cinnamon
1 stick unsalted butter
6 tbsp cane sugar
6 tbsp brown sugar
1 tsp baking soda
1 tsp boiling water
1 egg
1 tsp vanilla extract
Instructions
Preheat oven to 375ºF. In a small saucepan, place the goji berries and 1/4 C water. Simmer until all water has been absorbed. Remove from heat.
In a food processor, blend the oats until finely ground. In a large mixing bowl, combine the oats, flour, sea salt, and cinnamon. In the bowl of a standing mixer, blend the butter and sugars.
In a small ramekin, mix together the baking soda and boiling water. Add the liquid to the butter mixture. Then, beat in the egg and vanilla.
By hand, slowly fold in the dry ingredients and goji berries. Roll the dough into 1 inch round balls and place on a parchment or Silpat lined baking sheet. Make sure the balls have space and are about 2″ apart. Bake for 10 minutes, making sure to rotate the baking sheet halfway through. Remove from the oven and let cool completely before removing them from the sheet.
