Erewhon Overnight Oats
I've been loving Erewhon's overnight oats, but let's be honest, no one should be spending $10 a day on oats! So, here's my take on them. They're super simple to make, and a batch will stay for a week, so it's easy to prep ahead of time, so you have one less thing to worry about during the weekdays. This recipe is a great neutral base to start with, and if you want to make a chocolate batch, add some cacao powder; if you are more of a matcha person, add matcha powder. Endless combinations that will all be delicious.
EREWHON OVERNIGHT OATS
Makes 6 servings
1 cup coconut yogurt (I use Cocojune Pure Coconut Yogurt)
1 1/2 cups gluten-free oats (I use Bob's Red Mill Gluten Free Old Fashioned Rolled Oats)
1/4 cup chia seeds
1/4 cup hemp seeds
Pinch of ground cinnamon
