Crunchy Cucumber and Tomato Salad with Feta
Serves 2
1 Persian cucumber, ends trimmed and sliced on a diagonal
2–3 small heirloom tomatoes, sliced into wedges
1 small avocado, skin removed and diced into cubes
1/4–1/3 cup feta, crumbled
2 teaspoons chives, minced
Herbs of choice like fresh dill and oregano, roughly chopped
Juice from 1/2 small lemon
Olive oil
Sea salt
Freshly ground black pepper
Instructions
In two individual bowls or salad plates, divide and layer the cucumber, tomatoes, and avocado. Sprinkle with sea salt and black pepper. Crumble the feta on top of each bowl and sprinkle with the chives and herbs. Squeeze lemon juice all over and finish with a good drizzle of olive oil.
