Our dear friend came over the other day to have a coffee and catch up, and as we sat around chatting about life, he shared something I can't stop thinking about. His colleague, a 60-year-old man, had just had his first child. A very successful creative who had always focused solely on his career, this man had put things like relationships, family, and fatherhood on the back burner, as work had always been so consuming. But now, with the birth of his child, everything had shifted; there was only one focus: spending as much time as possible with his family. "If I'm lucky," he said, "I've got 20 summers left." This sentence hit me hard, especially after celebrating Costa's 9th birthday (a bit early) this past weekend. If we count by summers, how many do we have left? Even for those who live long lives, summers are less than a hundred. We have to make each one count. This is what it’s all about and truly is a huge part of the big life change we’re making for our family. Spend as much time making magical moments with our babies for as long as possible...I'll take all the summers I can get. x
Mexican Chicken Chopped Salad
I knew this week would be a doozy with all the packing and organizing to prepare for our flight to Italy on Sunday, so I prepped a large batch of this chopped salad for easy lunches that would keep my energy up. As you probably know by now, I LOVE a chopped salad. The smaller the better in how you cut the ingredients, and I love the texture and burst of flavor in every bite. And it just looks so damn pretty! You can also play around with adding other ingredients like jicama, scallions, pinto beans, and cotija cheese. Endless possibilities.
