Costa's Cardamom Latte
Makes 2Â 8 oz lattes
1 C homemade almond milk or nut milk of choice
1 C water
5–6 cardamom pods
1/4 tsp cinnamon
1/2 tsp ground cardamom
1/2 tsp vanilla powder or vanilla extractÂ
1 decaf chai rooibos tea bag
Honey, to taste
Instructions
Using the flat side of a knife, carefully smash the cardamom pods so they open up slightly.
In a small saucepan, pour the almond milk and water. Add the cardamom pods, cinnamon, ground cardamom, and vanilla. Heat on medium until almost boiling. Turn the heat off and add the teabag. Let steep for 5-7 minutes. Strain the mixture to remove all the pods, seeds, etc. Stir in honey to taste.
If you like, you can hit it with an immersion blender to get a little foam on top. Finish with a sprinkle of ground cardamom or cinnamon.
