Breakfast Sausage Patties
1 lb ground pork (you can also use ground turkey or chicken)
2 garlic cloves, pressed in a garlic press
1 1/2 tsp dried oregano
1 1/2 tsp dried thyme
a pinch of nutmeg
1 tbsp maple syrup
extra virgin olive oil
sea salt
black pepper
optional: red chili flake, fennel seed, parsley
Instructions
In a medium bowl, thoroughly combine the ground pork, garlic, oregano, thyme, nutmeg, maple syrup, and a generous pinch of salt and some freshly ground black pepper. Cover and let rest for 10 minutes.
Using your hands, form the sausage into flat patties that are about 2″ across. Set on a plate.
In a medium nonstick or cast iron skillet, heat 2 tbsp olive oil on medium heat. Once hot, place the sausage patties directly in the pan. Cook the sausages on both sides until golden brown and cooked through, approximately 5-8 minutes depending on how thick your patties are. Serve alongside other breakfast favorites like scrambled eggs, sliced tomatoes, and sweet potatoes.
