Better-For-You Blueberry Muffins
I love making healthy, sweet treats and baked goods for easy snacking, something that satisfies a sugar craving but still leaves me (and all my boys) feeling good. The other day, I saw a photo of a perfect golden muffin overflowing with juicy blueberries. It looked incredible, but the ingredients included white flour and white sugar, precisely the kind of ingredients I try to avoid. That inspired me to test a lighter, more nourishing version of a classic blueberry muffin. I wanted more fiber and protein, no refined sugar, and healthier fats without sacrificing flavor or texture. These turned out so much better than I imagined. They’re bursting with blueberry flavor, tender, and perfectly sweet. That first bite, warm out of the oven, really was everything I was hoping for.
