Basic Homemade Coconut Milk
Makes about 3 cups
4 C water
2 C unsweetened coconut flakes
Instructions
Heat water until warm. Add 2 cups of unsweetened coconut flakes to a blender. Pour the warm water over the coconut flakes, cover but still allow any heat or steam to escape, and blend until smooth.
Place a strainer over a bowl and line it with cheesecloth or a thin cloth (or use a nut milk bag), strain the coconut mixture. Once most of the liquid has strained into the bowl, gather the sides of the cloth, and gently squeeze to get any remaining liquid out. Let cool and store in the fridge for up to 4 days.
