Cashew Fig Milk

I love when a recipe is so easy and also so delicious. Once the nut milk is made, you can whip up the Cashew Fig Milk in seconds. It's creamy and decadent with just the right amount of sweetness. And it has been a real hit with Bruno, who keeps stealing mine whenever I make it!

CASHEW FIG MILK

Serves 2

  • 2 cups homemade cashew milk (recipe below. Other nut milks will work too)

  • 3-4 ripe fresh figs

  • Honey to taste

  • Pinch of sea salt

CASHEW MILK RECIPE (unsweetened)

  • 1 cup raw cashews

  • 4 cups water

First, make a batch of unsweetened cashew milk. Soak the raw cashews in water overnight. Drain and rinse the cashews. Place the soaked nuts in the blender and add 4 cups of water. Blend until creamy and smooth—no need to strain the milk. Pour into a container and store in the refrigerator.

When you're ready to make the Cashew Fig Milk, add 2 cups of cashew milk to a blender. Next, add the fresh figs, a little honey, and a pinch of sea salt. Blend on high until creamy and smooth. Taste. Add more honey if needed. 

Other ideas for things to try in the milk: 

  • dash of cinnamon 

  • dash of cardamom

  • 1/2 coconut water, 1/2 water

  • a date instead of honey for sweetness

Andre’s Path to Italian Citizenship

The question Andre and I are asked the most recently is, "How are you able to move to Italy?". Many people might dream of doing something like this but need help knowing where to begin. Even the tiniest dive into the process can be overwhelming, quickly shutting down any desire to make it a reality. You must want it, be persistent, and constantly be in a problem-solving mindset because there are plenty of obstacles. Each country has its own set of requirements and avenues to residency and citizenship, so we can't speak to all of them. Still, I wanted Andre to jump in and share his journey toward Italian citizenship, which he has been working relentlessly on for the past few years.
